Orange Carrot Cake, Mom's Version

I love it when people take a good recipe and put their own tastes into it! My Mom did this with the Orange Carrot Cake and it is super tasty so I had to share her version.


Orange Carrot Cake, Mom's Version

3 cups whole wheat flour
2 cups Sucanat
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon nutmeg (optional)
1/2 teaspoon sea salt
2 heaping cups of shredded carrots
3/4 cup orange juice
3/4 crushed pineapple WITH juice
2/3 cup melted coconut oil
2 teaspoons vanilla
2 tablespoons ground flax seed
1 large handful raisins
1 large handful coarsely chopped walnuts
some raw sugar (optional)

Heat oven to 350 degrees. Mix all dry ingredients in bowl. then add carrots. Stir until well coated. Then add remaining wet ingredients and stir just until blended. Fold in walnuts and raisins. Pour into 2 ungreased 9 inch square pans or one regular sized cake pan. Bake 25-30 minutes or until done ;) You can also sprinkle a bit of raw sugar over the top before baking. No frosting is needed for this cake. But it would be good topped with "My Favorite Whipped Creme" very tasty either way! NOTE: You can use either soft white wheat or hard white wheat for your flour. I have always used the hard white but am curious to know how it would be with the soft white cause it is supposed to be better for cakes and things. Give both a try let me know which way you like best!
