I thought I had this one on here already but just noticed that I didn't! It's super tasty enjoy!

Orange Carrot Cake
1 1/2 cup whole wheat flour
1 cup Sucanat
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon sea salt
1 heaping cup of shredded carrots
3/4 cup orange juice
1/3 cup melted coconut oil
1 teaspoon vanilla
1 tablespoon ground flax seed
some raw sugar (optional)
Heat oven to 350 degrees. Mix all dry ingredients in bowl. then add carrots. Stir until well coated. Then add remaining wet ingredients and stir just until blended. Pour into ungreased 9 inch square pan. Bake 25-30 minutes. You can also sprinkle a bit of raw sugar over the top before baking. No frosting is needed for this cake. But it would be good topped with "My Favorite Whipped Creme" very tasty either way! NOTE: You can use either soft white wheat or hard white wheat for your flour. I have always used the hard white but am curious to know how it would be with the soft white cause it is supposed to be better for cakes and things. Give both a try let me know which way you like best!
