This dinner is one of Ry's (my husband; his name is Ryan I call him Ry most of the time) favorites! The refried bean recipe is posted below I also thought I had a Spanish Rice recipe on here to but I may not. Either way although that one is good I hardly use it because you have to cook up all the rice in the seasonings and it takes a while. I would rather cook up a bunch of brown rice in the rice cooker and keep it in the fridge for the week and season it up how I feel like. Mostly I just take 2 or more cups of cooked brown rice and put with a can of stewed tomatoes and enough tomato puree to not have it be dry. I add sea salt and Mexican seasonings and a little Sucanat and Basil. I usually put some onion in it but not always. Minced onion or powdered work well too. It's just a quick and easy way I have found to make Spanish rice. My other recipe though is more "authentic" and I will try to post it soon if it is not already on here. Even though all the dishes are Simple I usually do not make them all together. A lot of times we just have the Fajitas with salad or the refried beans with salad, yeah we eat salad a lot! But sometimes it is fun to have all together just like at a Mexican restaurant! Of course there is usually salad too! ;)
Fajitas
Slice all the veggies fajita style saute just until crisp-tender in the oil, Shoyu and seasoning. Be sure not to over cook your veggies just lightly saute. We like them with corn tortillas warmed in a frying pan with a little olive oil. We also put Spanish Rice and Guacamole on them. You can use the filling on a taco salad in a tortilla with refried beans and /or guacamole and salsa, or in a fajita type casserole. Left overs would even be good to throw in with a stir fry the next day. It's a really flexible recipe do what you want, have fun make it fit your tastes!
Basic Fajita Filling
1 or 2 medium yellow onions
1 green bell pepper
1 red bell pepper
1 yellow or orange bell pepper (optional)
½ of a purple or green cabbage
3 Tablespoons olive oil
2-3 Tablespoons Shoyu
Mexican seasoning (chili powder, cayenne, garlic, cumin, oregano, coriander, paprika etc.)
Optional Ingredients:
Corn
Black Beans
Zucchini
Mushrooms
Asparagus
Squash
Carrots
1 or 2 medium yellow onions

1 red bell pepper
1 yellow or orange bell pepper (optional)
½ of a purple or green cabbage
3 Tablespoons olive oil
2-3 Tablespoons Shoyu
Mexican seasoning (chili powder, cayenne, garlic, cumin, oregano, coriander, paprika etc.)

Tam-can you tell me what your average monthly food bill is and maybe some tipe you've learned to eat healthy for cheap.
ReplyDeleteI would say for our family of 6 we average about $600 a month for food. Of course I have never really been strict about the food budget. I have pretty much bought what I need and don't sacrifice price for bad ingredients. (we sacrifice in other areas but not health ie. I've never had a SUV or brand new furniture;) BUT I'm pretty sure without even trying very hard I could skim that down by at least a couple hundred dollars. I hope to half it! We spend the most of fresh fruits and veggies. I am learning to grow a better garden and by local while in season and dry and freeze to use through winter. That will save me a lot right there. I stopped buying "healthy" cereal and I make granola etc. And I'm learning to make bread more often and buy it less. Not buying convience saves a lot too! Both in money and health.
ReplyDeleteYou just have to learn to look at things differently I know a lot of people think I must live in my kitchen. But I promise once you have the things you need an have made it your way of life. You will find you spend less money and less time! ;) I seriously only average maybe an hour a day in my kitchen. IF THAT!
