Classic Oatmeal Cookies

I have been trying for a while now to find a really good old fashioned Oatmeal Cookie recipe that I could "healthify." Every time I try they have ended up a bad consistency. (usually ran all over the pan and didn't even resemble cookies;) Well for Cub Scouts my son needed to cook for one of his requirements. His Scout book (of all places) had a regular old Oatmeal cookie recipe. I thought it shouldn't be to hard to healthify so my son and I put our heads together and we came up with these! They turned out great I have always like good ol' Oatmeal Cookies and I am so excited these turned out!


Classic Oatmeal Cookies

3/4 cup coconut oil melted
1 1/2 cup Sucanat
egg replacer for 1 egg
1/4 cup water
1 teaspoon vanilla
3 cups uncooked regular oatmeal
1 cup whole wheat flour
1 teaspoon sea salt
1/2 teaspoon baking soda
dash of cinnamon and/or nutmeg (optional)

Beat together the oil, Sucanat, egg replacer, water and vanilla until creamy. Combine the remaining ingredients, add to the first mixture, and mix well. Drop onto greased cookie sheet like any cookie. Bake at 350 degrees for 10-12 minutes. Be sure not to over bake or they will be crispy I like my cookies chewy. You may find you want to even bake them for less time! For variety, add chopped nuts, raisins, carob chips, or coconut.

  2. OOOOOHHH I can't wait to try these.. I will have to get some egg replacer. I might add some raisins to them too..

    I wonder why I don't like oatmeal and love oatmeal cookies (though I haven't had any in years)

  5. I use Ener-G Egg replacer and it can be found at most health food stores. It is mostly made of potato starch I think.

  8. Have you ever tried using flax "eggs" to replace the eggs in recipes? I've tried them in a few recipes with success (and a few without sucess.) Just wondering if that would work with these. Guess I can try it and see. : )

  9. Carla: I have not tried the flax with this particular recipe. But I have before with oatmeal cookies and for some reason they did not turn out. I have used flax though in other cookies and they turned out great!
