Veggie-bean Burgers


Kidney beans and chopped fresh
veggies join forces to make
this scrumptious burger.
While cooking...
open your windows and
let the aroma fill your neighborhood.
No one will ever guess you're
grillin' up health food.


Veggie-bean Burgers

1 (15oz) can kidney beans, drained, rinsed
1/2 cup uncooked rolled oats
1/2 cup chopped fresh mushrooms
1/4 cup chopped onion
1 small carrot, shredded
1/2 medium red bell pepper, chopped
1 garlic clove, minced
3 Tbsp organic ketchup
3/4 tsp sea salt
1/2 cup cooked brown rice (optional)

In a food processor bowl with
metal blade, combine first 9 ingredients;
process with on/off pulses until
coarsly chopped. Do NOT puree.

*This can also be done by blending
kidney beans in blender on low
then putting mashed beans into bowl and
adding finely chopped veggies, ketchup
and salt. Stir in cooked brown rice
if desired.

Shape mixture into 4 patties,
1/2 inch thick.

Cook in frying pan
over medium high heat
until both sides are browned,
10-12 minutes...
or until patties are thoroughly heated.

Place patties on whole wheat buns
with lettuce, tomato slices and
whatever else you like on your burger.

Perfect!

Note: I have made these
burgers for years, and just
last night I tried them
with brown rice.
They are delicious
either way...but I will
make them with
brown rice from now on.

  1. So Em, would these work on a BBQ grill. Or are they kind of crumbly? I think I made these a long time ago and I can't remember they were good though! Thanks for posting them!

  2. The ketchup helps the mixture maintain it's shape...yet, it's not really stiff. If your BBQ has narrow slits...go for it. If not, beware! ;)

    They ARE tasty.

  5. Hey Thanks Courtney! I have made Ketchup before but it was complicated and didn't taste good. This one looks much more doable. I will have to try it! And yeah tomato paste usually is just fine. It's the sauce you have to be careful of especially name brands like Hunts. I swear their "natural flavors" is MSG because I have side effects every time I have it so much so that Ryan is sure to keep that out of the house! ;)

  6. Emily, I'm not crazy about kidney beans. Have you ever used other kinds of beans in this recipe? I like white beans and black beans, but for some reason do not love red beans. Thanks!!

  7. Amy: Emily could probably answer this better since she has made more bean burgers then me. But I have made black bean burgers before and I bet pretty much any bean would work!

  11. Guess it's been a while since I stopped by but I finally got around to trying the veggie burgers - they turned out alright, kind of mushy - any suggestions?

  12. T Rex Mom: I would be sure your beans are drained really well and you could add more brown rice or oats in needed. And maybe make them flatter and make sure they are fully cooked.
