Summer Strawberry Salad with a Kick

This salad is super simple with a sweet lemony taste!  Great for this time of year!

Summer Strawberry Salad with a Kick

Baby leaf spinach
1 head Romain lettuce chopped
1 green apple, cut up fruit salad style
1 red apple, cut up
1 cup sliced strawberries 
1/2 cup grapes cut in half
1/2 cup fruit juice sweetened dried cranberries
1/2 cup coarsly chopped pecans (optional)
1/4 cup hemp seed (optional)

Toss together in a large bowl.

Dressing:

2 Tablespoons lemon zest
2-4 Tablespoons or more to taste of fresh lemon juice
2 teaspoons mustard seed
1/2 scant cup Sucanat
1/3 cup extra virgin olive oil

Mix dressing ingredients together in a bowl.  Add to salad right before serving otherwise the greens will get soggy.  Can sprinkle with more mustard seed for color and an extra kick!

  1. What about using Grapeseed oil? It is really mild. Is it one of the oils on the approved list?

  2. Courtney: I have used Grapeseed oil but I have heard it goes rancid quite fast so instead of worrying about it. I have simplified to the oils that keep well. Don't worry with this salad the lemon makes it so you don't taste the olive oil flavor.
