Cucumber Salad

I noticed that we had A LOT of cucumbers that needed using and SOON!  I find this is the best way to be sure you don't let those cukes go to waste!  Slicing them and storing them in the Vinegar water makes it so they keep A LOT longer and you can take your sweet time to eat them up.  Plus it makes them very Tasty.  Great for a dinner appetizer because the Apple Cider Vinegar helps with digestion!

Cucumber Salad

Fresh Cucumbers, Sliced (peeled or not, whatever you prefer)
1 Fresh Onion cut in half and sliced
Raw Apple Cider Vinegar
Good drinking water
2-4 Jalapenos (depending oh how hot you want it) chopped
small hand full of fresh Cilantro chopped
Salt and Pepper to taste

In a bowl combine the cucumbers, onion.  Cover with about half vinegar and half water.  Be sure to cover well.  If you like it more sour use more vinegar and less water.  Stir in the chopped jalapenos and cilantro.  Salt and pepper to taste!  After eating the veggies you can use the same liquid to add more cucumbers and onions if you would like!  Makes a great snack, side dish or appetizer!  You could also add some fresh garden tomatoes to it once it is dished up and it would be colorful and yummy!

  1. Mmmm...I love this stuff. But, I've never put jalapenos in with it. That sounds even more exciting to eat!

  3. I've been having a yogurt based cucumber salad, so this was fun, we had it w/ pizza night Friday, it tastes like eating fresh pickles. :)
