Mango Mouse and Berry Parfait

I know I bring this to the front of my blog at least yearly! I probably always will so just get used to it! It's one of my very favorites!! And it's a great time to be making these again! I think it will be fun to try with fresh raspberries and strawberries this time! If you haven't tried them you are missing out! They are Simply Heavenly!!!

Mango Mousse and Berry Parfait


4 Cups Fresh Mangoes
4 TB Melted Coconut Oil
1 teaspoon Vanilla
Zest of one small lime
Juice of one small lime
1/2 Cup Agave or Pure Maple Syrup
Pinch of Salt
1 Cup Berries (I used strawberries can use any mixture of fresh berries you want)

Blend all ingredients except for the Berries and a cup of the mango in a food processor or blender until smooth and creamy. I slowly added the melted coconut oil while blender was running so it would mix in well before it started setting up. After it is all mixed and creamy, transfer to a bowl and then Chill it in the fridge for at least 1-2hrs or overnight. Fill the cups with a layer of the mousse, a layer of fresh sliced mango, then another layer of the mousse, then a layer of fresh berries and so on until full. Top with a layer of fruit and fresh mint leaves.

This is so good an instant favorite!

  1. This was the closest thing to heaven I've ever had! It was soooo super tasty. Pretty sweet, I used the maple syrup instead of the agave, but mixed with the strawberries and mango it was really good. I couldn't believe it was actually healthy.I put the granola stuff from here on top and it was super tasty, and I added some coconut to it too. A must try for sure, and I'll definitely make it again!

  2. So I've decided since I can't cook very good, at all! haha I need you to come be my personal chef! I definitely can tell that I would eat extremely well... plus healthy too! :-) haha deal? jk :-)
